- [21-03-4] Ware wash area: three compartment sink with dishes in detergent and sanitizer mixed together. Discussed with the employee.. set up the three compartment sink.
- [22-02-4] Food-contact surface soiled with food debris, mold-like substance or slime. Observed the cutting board at the front counter stained.
- [08A-05-6] Raw animal food stored over/not properly separated from ready-to-eat food. Walk in cooler: raw shell eggs stored above cooked goat. Inspector discussed with the operator and provided the hand out for the proper storage of food.

- [16-37-1] No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator cannot provide the chlorine test kit for the establishment. Inspector discussed with the operator, demonstrated how to use the test kit.

Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Observe the establishment added a wall between the dining room and the cook line and blocked off ( partition wall) the front front counter bar area and the cook line area also remove the three compartment sink from the front area bar area. observed in the back area, the wire wash area and back storage area establishment. Move the mop sink to an outside of the actual room, added a dishwashing machine and move the three compartment sink to where the sink was located and added a dish machine where the three compartment sink was located also added a walk-in cooler in the back storage area. Establishment also added an ice machine in the patio drink station.
- [31A-09-4] Handwash sink not accessible for employee use at all times. Observed in the warewash area, hand washing sink blocked by a table.
- [31B-02-4] No paper towels or mechanical hand drying device provided at handwash sink. Observed at all three hand washing sinks. Discussed with the operator. Operator placed paper at all three hand washing sinks.
- [31B-03-4] No soap provided at handwash sink. Observed no soap at the handwash sink in the ware wash area and in the patio drink area.
- [51-11-4] Carbon dioxide tanks not adequately secured. Observed two CO2 tanks not secured by the additional storage area. Discussed with the operator the proper procedures.
- [53B-15-4] Employee has not received adequate training related to their assigned duties as evidenced by lack of general knowledge in performing their assigned duties. Ware wash area: three compartment sink with dishes in detergent and sanitizer mixed together. Inspector discussed with employee and showed for how to set up a three compartment sink properly and how to wash, rinse and sanitize
- [16-04-4] No drainboards or equivalent provided for soiled items and/or air drying cleaned items. Water wash area.
- [31B-04-4] No handwashing sign provided at a hand sink used by food employees. Observed no hand washing sign at the sinks in the wash area and the patio drink station. Inspector discussed with the operator, provided signs to the operator to post at the sinks.
