  • [14-01-5] Bowl or other container with no handle used to dispense food. Observed a plastic scoop with no handle used for grated Parmesan in the walk in cooler. The operator removed the scoop from the cheese.
  • [40-06-5] Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed an employee phone stored on a shelf above a food preparation surface on the cook line. The employee properly stored the cell phone.
  • [08B-36-4] Food stored in a location that is exposed to splash/dust. Observed a container of liquid eggs stored under the dishmachine. The operator properly stored the liquid eggs.
  • [10-08-5] Ice scoop handle in contact with ice behind the front counter. The operator properly stored the ice scoop.
  • [10-07-4] In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed in-use dessert utensils stored in 73F standing water at the entrance to the front counter. The operator properly stored the utensils.
  • [06-01-5] Time/temperature control for safety food thawed in an improper manner. Observed liquid eggs, raw scallops, raw salmon, and raw shrimp thawing at room temperature. The operator placed the above items in the walk in cooler.
  • [08B-02-4] Displayed food not properly protected from contamination. Observed self-service pepperoni bread samples not covered. The operator covered the samples.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed Demi glacé (82F - Hot Holding) in an unplugged hot holding unit. The operator stated the Demi glacé has been held for approximately 2 hours. The operator voluntarily discarded the sauce.
  • [31A-09-4] Handwash sink not accessible for employee use at all times. Observed sheet pans stored on top of the basin for the handwashing sink near the dishmachine. The operator removed the sheet pans allowing access to the hand sink.
  • [31B-03-4] No soap provided at handwash sink at the end of the cook line. The operator provided soap for the hand sink..
  • [53B-14-5] Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
