Manager stated the pan was supposed to go inside the reach in cooler. Manager placed inside reach in cooler. Observed on inside ledge of reach in cooler Cream sauce (52F - Cold Holding) in soufflé cups. Manager stated he pulls out certain amount during rush. Manager placed inside reach in cooler.
  • [12A-25-4] Employee touched face/hair and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee engaging in food preparation touch face with gloved hands and proceeded to engage in food preparation. Manager intervened and employee removed gloves and washed hands properly.
  • [31B-02-4] No paper towels or mechanical hand drying device provided at handwash sink. Observed employee handwashing station in prep area without paper towels. Employee provided paper towels.

  • [29-08-4] Plumbing system in disrepair. Observed hot water faucet at employee hand washing station on cook line in disrepair, will not turn on.
  • [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed walk in cooler door gasket soiled with mold like substance. Observed filters over grill area soiled with grease.
  • [27-16-4] Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed hot water faucet at employee hand washing station on cook line in disrepair , will not turn on.
