  • [21-12-4] Wet wiping cloth not stored in sanitizing solution between uses. Wet wiping cloth stored on prep table.
  • [31A-11-4] Handwash sink used for purposes other than handwashing. Observed cup and drain from coffee machine in hand wash sink at bar area.
  • [29-34-4] Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Two hose bibbs above triple sink missing vacuum breakers, hose Bibb outside of back door missing vacuum breaker. Hose Bibb with hose attached by walk in cooler missing vacuum breaker.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Reconstituted chicken stock held in container at cookline at 94F. Recommend holding on time. Provided time paperwork. Has been out for 15 minutes per person in charge. Will hold for remaining time then discard.
  • [51-11-4] Carbon dioxide/helium tanks not adequately secured. Several CO tanks unsecured in kitchen and back storage area.
  • [12B-14-4] Employee beverage container in ice machine/ice bin. Observed employee drink held in ice used to hold cold holding items on line. Person in charge removed.
  • [29-37-4] Spray hose at dish sink lower than flood rim of sink. Hose attached at hose Bibb above triple sink fully submerged in water in sink at time of inspection. No vacuum breaker observed on hose Bibb.
  • [08A-20-5] Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In make line reach in cooler raw chicken stored over raw lamb. Person in charge began rearranging.
