Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dishwasher (Chlorine 0ppm). Operator replaced empty container and primed machine new Dishwasher (Chlorine 50ppm)
- [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at kitchen prep counter garlic in oil (63F - Cold Holding). As per operator less than 2 hours.
- [02D-12-1] Juice packaged in the establishment that has not been specifically processed to prevent, reduce, or eliminate the presence of pathogens not bearing a warning label. Observed at lobby beverage coolers for prepared onsite assorted fruit and wellness juice not bearing the warning label. Operator began to print and place warning labels onto items.
