Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dishwasher (Chlorine 0ppm). Operator replaced empty container and primed machine new Dishwasher (Chlorine 50ppm)

  • [02D-12-1] Juice packaged in the establishment that has not been specifically processed to prevent, reduce, or eliminate the presence of pathogens not bearing a warning label. Observed at lobby beverage coolers for prepared onsite assorted fruit and wellness juice not bearing the warning label. Operator began to print and place warning labels onto items.
  • [16-13-5] Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Observed dishwasher rinsing soiled items in sanitizer step of three compartment sink.
  • [10-07-4] In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed throughout, utensils in standing water of 72F. Operator removed.
