In 3 crock pot unit on back prep table, chili (109F - Hot Holding); sour kraut (111F - Hot Holding). Employee stated chili and sour kraut were put into warmer about 11 am. Operator turned crock pots from warm to hot to bring temperature up.
  • [36-73-4] Floor soiled/has accumulation of debris. Floor under 3 compartment sink have black build up. Also, large brown stain on floor under flip top reach in cooler at front counter.
  • [21-08-4] Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. At bar, Sanitizer Bucket (Quaternary 0ppm). Employee stated the opener made the sanitizer buckets but will make new sanitizer bucket.
  • [31B-02-4] No paper towels or mechanical hand drying device provided at handwash sink. No paper towels available at handwash sink by 3 compartment sink. Employee refilled.
