  • [41-10-4] Toxic substance/chemical improperly stored. Observed sanitizer stored above prep table. Operator moved for proper storage.
  • [02B-01-5] Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. Observed ceviche added to menu and not marked with consumer advisory. Observed oysters served under consumer advisory not marked as well. Educated operator on proper menu marking. Operator working on marking menus.

Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dish machine testing at 0ppm. Operator called technician and set up manual sanitizer. Operator fixed dish machine before end of inspection, now testing at 100ppm.
