As per manager, product was thawing at room temperature for less than 1 hour. Observed sliced cheese (54F - Cold Holding) at preparation cooler. As per employee, for less than 2 hours. Manager removed excess product. Observed raw pork belly (50F - Cold Holding); raw beef (49F - Cold Holding); pico de gallo (49F - Cold Holding) at preparation cooler across from fryers. As per manager, since the previous day. Observed raw shrimp (50F - Cold Holding) at reach in coolers drawers. As per manager, product was thawing at room temperature for less than 1 hour.
