Cooked chicken wings on Time Temperature Controlled for Safety with no time mark. ( per Person In Charge, 16 min time hold on wings ). Manager turned on digital timer. Items were placed just few mins ago per manager.

Operator stated lid was left open approx 30 mins for lunch rush. Operator moved all items to freezer. All items re-temped after 1 hour below 41 F.
