- [02C-02-5] Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed pork, chicken wings and prime rib in reach-in cooler not date marked. The chef stated the pork, prime rib and chicken wings was prepared on Tuesday 9/29/2026.
- [10-20-4] In-use tongs stored on equipment door handle between uses.
- [21-10-4] Soiled dry wiping cloth in use.
- [21-38-4] Wiping cloth sanitizing solution stored on the floor. The chef removed the sanitizer bucket from off the floor.
- [22-57-6] Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed dishwashing machine reaching temperature of 143.7. The Director is putting in a work order for the dishwashing machine and set up the 3 compartment sink.
