  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside reach-in cooler: ham (49F - Cold Holding). Manager stated the ham was thawed under running water and portioned approximately two hours prior, then moved the ham to the freezer to rapidly cool to 41F.
