  • [42-01-4] Wet mop not stored in a manner to allow the mop to dry. Observed wet mops stored on floor or in mop bucket not hung to dry by mop sink.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken wings inside heated holding drawer at 97F at approximately 2 hours per Operator. Operator increased drawer temperature to reheat. At 2 hours 20 minutes wings were at 125F and rising.
