- [21-05-5] Cloth used as a food-contact surface. Pan containing washed and cut broccoli covered with cloth towel at cookline. Manager removed the towel during this inspection.
- [14-86-1] Non-food grade paper/paper towel used as liner for food container. Cardboard from soda cans used to line interior of pan containing cooked chicken at cookline and on shelf inside walk-in cooler. Manager transferred both items to clean plastic pans during this inspection.
- [06-01-5] Time/temperature control for safety food thawed in an improper manner. Three pans of frozen chicken thawing at room temperature on rolling rack near three-compartment sink. Manager moved the chicken into the walk-in cooler to continue to thaw.
- [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In warmer at cookline: egg drop soup (132F - Hot Holding). Manager stated the soup has been held for approximately one hour and began to reheat the soup to 165F during this inspection.
- [14-45-4] Cardboard used to line nonfood-contact shelves. Cardboard used to line shelf near fryer.
- [22-02-4] Food-contact surface soiled with food debris, mold-like substance or slime. Outer rim of rice warmer at cookline soiled with old food debris.
- [36-37-5] Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. Absorbent and porous acoustic ceiling tiles in-use throughout kitchen.
- [41-10-4] Toxic substance/chemical improperly stored. Aerosol can containing "WD-40" stored on shelf above bags of rice in back of kitchen. Manager removed the chemical from the shelf during this inspection.
- [12B-07-4] Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee drink on prep table beside pan of broccoli at cookline. Manager removed the drink during this inspection.
