  • [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Reach in cooler gaskets soiled with food debris on reach in coolers in front cooks line area.

  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cheese (47F - Cold Holding) items container over the fill line top portion of item at 47F, bottom portion at 41F, manager split container contents and placed some below in reach in cooler.
