Observed diced tomato (54F - Cold Holding); Caesar dressing made in house- (57F - Cold Holding) both containers label dated 8/2/26. Also observed moldy ham croquettes (62F - Cold Holding) located at the reach in cooler across oven. Observed ground beef (47F - Cold Holding) (52F - Cold Holding); shredded lettuce (62F - ambient) as per operator just was added to line after prep, they put it back on the walk in cooler to way until reach 41 F.
