Observed raw conch and snapped slacking at room temperature and its no longer frozen. Advised operator to slack with cold running water or in the cooler. Operator turned on cold running water.
[36-24-5] Hole in or other damage to wall in the hallway leading to the bathrooms.
[10-01-5] In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed a scoop handle in direct contact with rice in the walk in cooler. Operator removed scoop handle from direct contact with rice.
[14-20-4] Ripped/worn tin foil used as shelf cover in the kitchen.
[31A-11-4] Handwash sink used for purposes other than handwashing. Observed front handwashing sink with a bucket of water in it. Operator removed bucket of water. Observed handwashing by the grills with a hose connected to the faucet. Operator removed hose.

[36-24-5] Hole in or other damage to wall. Observed large hole in the wall in the hallway leading up to the kitchen.

Observed raw chicken stored over raw pork in the walk in freezer and neither item was in its commercial packaging. Operator stored properly.
