Per operator, received frozen this morning and placed into cooler. Advised operator to remove product from reduced oxygen packaging.
[27-16-4] Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. At hand wash sinks by 3 compartment sink and by rear entrance to kitchen.
[36-34-5] Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Ac vents soiled with dust over clean dish rack by dish machine.
[03D-15-4] Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Breading cooler: conch (45F - Cooling) at 10:05; cooling since 9:30 - 45F at 10:40 Observed in tightly wrapped portion bags. At current rate of cooling product will not reach 41F within 4 hours. Operator iced down to product to quick chill.
