Observed employee unaware of how to set up three compartment sink and properly wash, rinse, and sanitize dishes. Provided operator with handout via email.
  • [14-11-5] Equipment in poor repair. Observed reach in cooler gasket torn at front counter and reach in freezer in back prep area.
  • [29-37-4] Spray hose at dish sink lower than flood rim of sink. Observed spray hose hanging inside triple sink at dish area.
  • [22-20-5] Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed interior of ice machine soiled.
