  • [06-01-5] Time/temperature control for safety food thawed in an improper manner. Pan of raw frozen fish thawing at room temperature on prep table at cookline. The fish is still frozen solid. Manager placed the fish into a cooler to continue to thaw under refrigeration.
  • [24-08-4] Equipment and utensils not properly air-dried - wet nesting. Wet nested drink cups beside fountain machine.
  • [33-15-4] Garbage can located outside has no lid or lid open/broken. Both lids of cardboard dumpster missing.
  • [40-06-5] Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. 1. Employee purse stored against bottle of margarine on shelf in dry storage room. Manager removed the purse from the shelf during this inspection. 2. Employee phone sitting on refrigerated make-table at cookline. Manager removed the phone from the area during this inspection.
  • [53B-14-5] Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One International Food Service Executives Association food handler certificates provided by manager expired on 09/14/2025.
  • [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. 1. Wire shelving inside walk-in cooler soiled with mold-like substance. 2. Lid of sugar bin below fountain machine soiled with grease and/or sticky substance. 3. Sides of fryers at cookline soiled with grease. 4. Interior of reach-in freezer at cookline soiled with food debris. 5. Lower shelf of prep table at cookline soiled with food debris.
  • [31A-11-4] Handwash sink used for purposes other than handwashing. Colander containing tuna stored inside handwash sink beside dish machine. Manager moved the tuna back into the walk-in cooler during this inspection.
  • [03F-02-5] Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Two flats of raw shell eggs stored on prep table at room temperature at cookline. Eggs are indicated as being held using Time as a Public Health Control on written procedures in their binder. Manager stated the eggs have been in-use for 20 minutes and added the proper time mark during this inspection.
  • [22-41-4] Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine chlorine 0ppm. The dish machine has already been in-use today. The manager primed the machine, then chlorine 50ppm. Inspector instructed manager to sanitize all dishes that have been sanitized using the dishwasher machine earlier today.
