  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the walk in cooler: Ambient shell eggs (52F - Cold Holding); Tofu (49F - Cold Holding). All other foods in the cooler were not temperature sensitive. Operator stated the products had been there for approximately 2hrs. Operator placed them in their reach in cooler.
