  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In walk in cooler; Turkey 47F. Per person in charge turkey was just received on food truck. Person in charge placed in walk in freezer to bring down to 43F.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Sausage 131F hot holding in kitchen. Discussed time control and cooking less.
  • [10-12-5] In-use ice scoop stored on soiled surface between uses. Ice buckets and scoop on dirty surface. Person in charge placed in dish.
  • [36-34-5] Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Back kitchen vents have black mold like substance in them.
  • [45-05-4] Portable fire extinguisher missing from its designated location. For reporting purposes only. Fire extinguisher in on floor by back door.
  • [29-34-4] Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing on green hose at mop sink.
  • [41-17-4] Spray bottle containing toxic substance not labeled. Person in charge could not identify so she discarded it.
  • [50-09-4] Current Hotel and Restaurant license not displayed. Current license not displayed. Person in charge got licenses out.
  • [02C-03-5] Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Milk opened yesterday am not dated. Person in charge dated.
  • [06-09-2] Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. See stop sale. Salmon thawed in vacuumed sealed bag. Bag says to not thaw in bag.
  • [08B-02-4] Displayed food not properly protected from contamination. Cinnamon rolls out on self service display case not covered sufficiently.
  • [29-03-4] Water draining onto floor surface. Water draining on fool from back AC vent in kitchen.
  • [53B-14-5] Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One persons certificate expired in 8.26.
  • [40-06-5] Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Personal bag on prep table on service side of kitchen. Person in charge removed bag.
