  • [21-12-4] Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth not stored in sanitizing solution on top of steam table in front of walk in freezer at kitchen area. Employee removed it and stored it in sanitizer solution during inspection.
  • [22-02-4] Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade soiled on top of preparation table in front of back door at kitchen area. Chef removed can opener and put it in three compartment sink to wash during inspection.
  • [42-01-4] Wet mop not stored in a manner to allow the mop to dry. Observed wet mop stored inside mop bucket in front of back door at kitchen area.
  • [35B-01-4] Exterior door has a gap at the threshold that opens to the outside. Observed at back door at kitchen area.
  • [41-17-4] Spray bottle containing toxic substance not labeled. Observed degreaser spray bottle not identified under table next to dishwasher machine at kitchen area.
  • [08A-20-5] Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored on top of raw fish on shelf at meats walk in cooler at kitchen area. Operator stored properly during inspection.
  • [31A-11-4] Handwash sink used for purposes other than handwashing. Observed ice cubes inside hand wash sink next to coffee machine at front counter.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed Fried pork belly (97F - Hot Holding) inside steam table at front counter. As per operator for 1 hour. Operator removed fried pork belly to reheat it during inspection.
  • [40-06-5] Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employees back pack stored on dry storage shelf next to single service use items at kitchen area. Employee removed during inspection.
