  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked beef, cooked chicken (123F-124F - Hot Holding) in steam table across from grill. Operator stated meat was cooked this morning and placed in steam table, steam table may not have been hot enough yet when product placed in there. Operator reheated both meats to more than 165F and placed back in steam table.
  • [10-17-4] In-use knife/knives stored in cracks between pieces of equipment. Observed knife stored under cutting board in prep area across from meat display case. Employee removed knife to properly store.
  • [16-46-4] Old labels stuck to food containers after cleaning. Observed multiple old labels adhered to plastic containers on clean storage shelf above triple sink.
  • [08A-20-5] Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored above raw pork and raw beef stored over raw pork sausage in meat case in prep area. Employee removed raw pork to properly store in both coolers.
  • [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets on walk-in-cooler and walk in freezer soiled. Also, multiple filters in hood area above grill soiled. Also, shelf under grill has accumulation of grease/ debris.
