  • [53B-09-4] Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained. No original for Juan. Employee stated the original was damaged during time of inspection the hurricane.
  • [51-16-7] No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Establishment has expanded dining room, dry storage, added ovens, added restroom, and increased seating. The establishment added a cargo container with climate control for whole plant food and dry food storage outside the restaurant at back parking lot.

  • [31A-11-4] Handwash sink used for purposes other than handwashing. Wet wiping cloth, tongs and a milk carafe stored inside front service hand washing sink. Operator removed all items from sink at time of inspection.
  • [22-02-4] Food-contact surface soiled with food debris, mold-like substance or slime. Multiple cutting boards inside establishment soiled.
  • [08A-20-5] Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw chicken stored over raw pork and beef inside walk in cooler. Employee relocated all items to an approval location at time of inspection.
  • [24-08-4] Equipment and utensils not properly air-dried - wet nesting. Located at dry storage rack next to mop sink.
  • [29-42-4] Vacuum breaker missing at mop sink faucet. Mop sink faucet has individual hot and cold water pipe with a hose connected to both. No vacuum breaker on either faucet.
  • [14-09-4] Cutting board has cut marks and is no longer cleanable. Multiple cutting boards inside establishment with cut marks.
  • [06-01-5] Time/temperature control for safety food thawed in an improper manner. Three boxes of frozen Chicharrones and one box of pork spareribs, thawing out in room temperature next to kitchen dry storage rack. Employee relocated all boxes into walk-in cooler at time of inspection.
