[21-07-4] Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed chlorine solution was at 0ppm, owner changed the solution, new reading was at 100ppm.

Observed a container of collard greens and mixed vegetables, cabbage, and chicken without a date mark or label on it in the reach in cooler, owner stated was made the day before, and jars of jam and hot sauce on the front counter not date marked or labeled, owner date marked and labeled items.

[35A-03-4] Dead roaches on premises. Observed one dead roach in the 3 compartment sink and five dead roaches in a container that holds grease by the fryer.
[22-08-4] Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed microwave in the kitchen with food debris in it.

[51-13-4] No Heimlich maneuver/choking sign posted. Printed the owner a copy before end of inspection.

[08B-12-5] Stored food not covered. Observed chicken in the reach in cooler without a cover or protection.
[01B-32-4] Food stored in a container that previously held a toxic substance. See stop sale. Observed a drum that use to store the chemical lye, with a bag of 50 pounds of shell peanuts in it located in the hallway by the kitchen. The drum is rusted on the inside and outside and the operator could show no proof of it being cleaned. Owner voluntarily discarded.

[35A-04-4] Rodent activity present as evidenced by rodent droppings found. Observed approximately 3 rodent droppings behind reach in cooler on the floor in the kitchen and approximately 25 rodent droppings in a storage area by the reach in freezer on the floor and 10 rodent droppings on a slicer that is stored in a storage area.
[02C-02-5] Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed white rice and chicken wings in the reach in cooler without a date mark on it.
[41-04-4] Toxic substance/chemical on premise that is not required for the operation of establishment. Observed tracking powder on the floor in the front counter area, owner stated it was household pesticide.
