- [08A-11-5] Raw animal food stored over canned/bottled drinks. In the walk in cooler raw pork sausage is stored above bottled juice. Operator moved the raw sausage to proper storage.
- [31A-09-4] Handwash sink not accessible for employee use at all times. There is a large floor fan in front of the hand washing sink in the dishwashing area. Operator moved the floor fan to the side of the sink.
- [53B-14-5] Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Employee training for Diana D is expired.
- [22-20-5] Accumulation of black/green mold-like substance in the interior of the ice machine/bin. There is an orange mold like substance on the ice chute inside the ice machine
- [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the steam table on the cook line close to the ice machine, cheddar broccoli soup (130F - Hot Holding). Operator stirred the soup, 174F hot holding.
- [11-26-1] No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Provided operator with the employee health reporting agreement, employees began reading and signing the agreement.
- [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the drop in cooler on the end of the front counter closest to the pan storage area, hard boiled egg (48F - Cold Holding).per operator the hard boiled eggs have been in the drop in cooler less than 4 hours. Operator iced the hard boiled eggs for rapid cooling.
- [22-41-4] Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm). Operator replaced the empty sanitizer con, primed the machine, dishwasher chlorine sanitizer 100ppm.
