Missing for Eduardo Munguia and Jesus Marin working in the establishment for more than 2 months.
- [22-41-4] Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer 0 ppm . Employee replaced the bucket immediately, then 50 ppm.

- [12A-07-5] Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee came from outside and touched different surfaces, then engaged in food prep put in the gloves on without washing his hands . Employee was coached and washed hands correctly.
- [22-45-4] Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed plates and utensils being washed inside dishwasher machine when sanitizer bucket is empty. Employee replaced the bucket immediately and washed the dishes again. Chlorine 0 ppm, then 50 ppm.
