- [01B-01-4] Dented/rusted cans present. See stop sale. Observed one dented can of tomato purée on the can rack in the kitchen. Operator removed.
- [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets in reach in cooler soiled in the kitchen.
- [24-08-4] Equipment and utensils not properly air-dried - wet nesting. Observed clear containers stacked on the shelf in back of kitchen with water in between and not air drying properly.
- [31B-02-4] No paper towels or mechanical hand drying device provided at handwash sink. Observed no towels at hand wash sink towards front of kitchen, operator replaced.
- [16-55-4] Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine with a reading of 0ppm chlorine after sanitize rinse, operator putting a work order in, will use the 3-compartment sink for the dishes.
- [21-38-4] Wiping cloth sanitizing solution stored on the floor. Observed sanitizing solution on the floor by the prep table with the slicer on it, operator placed in proper location.
- [33-16-4] Open dumpster lid. Operator closed.
- [10-06-5] In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed handles of tongs down in a container of feta cheese on the prep table, operator moved.
- [08A-05-6] Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw hard shell eggs over a pan of garlic rolls in the walk in cooler, operator moved the eggs to the bottom shelf.
- [14-31-5] Nonfood-grade bags used in direct contact with food. Observed non-food black grade bags in the walk in cooler with bread in it.
- [03F-10-5] No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed no written plan for the pizza at the front counter, sent owner copy by email.
