  • [09-01-4] Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed server fill "sharks" with liquid to be used as a drink additive. Server handled shark with bare hands, the placed shark into drink.
  • [24-08-4] Equipment and utensils not properly air-dried - wet nesting. Plastic container on shelf in prep area. Operator separated to dry.
  • [08B-17-4] Unwashed fruits/vegetables stored with ready-to-eat food. Unwashed broccoli stored over prepared and portioned broccoli in walk in cooler. Operator moved unwashed to lower shelf.
  • [10-07-4] In-use utensil stored in standing water less than 135 degrees Fahrenheit. Scoops in dipper well with water not running, standing water at 73F. Operator turned on water.
  • [16-62-1] No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine.
