Checked temperature of cooked bacon 48°f stored overnight inside walk in cooler prepared labeled @ 6:01 pm on Monday 3/23 did not cool within 6 hours. Issued a stop sale notice on the cooked bacon. Ask for restaurant procedures for cooking bacon found out must be cooked to 145°f, recommend Manager to follow correct procedures.
