  • [06-09-2] Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. See stop sale. In reach in four door cooler in kitchen , raw salmon thawed in reduced oxygen package. Observed on original package box to removed fish from reduced oxygen package when thawing. Operator stated thawed overnight.
  • [14-09-4] Cutting board has cut marks and is no longer cleanable. In storage area by ice machine, cutting board has deep cut marks and no longer cleanable. Operator removed cutting board to discard.
  • [36-17-5] Floor tiles missing and/or in disrepair. In striate area by ice machine, observed floor tiles missing.
  • [08B-38-4] Food stored on floor. In kitchen by dishwashing areas fryer oil stored on floor. Operator moved fryer oil to shelf.
  • [33-19-4] Garbage on the ground and/or pad around dumpster. Soiled cardboard underneath garbage bin outside.
  • [33-20-4] Grease on the ground and/or pad around grease receptacle. Grease buildup surrounding grease receptacle and walls outside at grease trap outside by dumpster area.
  • [12A-17-4] Employee rubbed hands together for less than 10-15 seconds while washing hands. On cook line, cooked washed hands less than 10 to 15 seconds after cracking raw shell eggs. Discussed with employee to wash hand 20 seconds or more. Employee rewashed hand properly for 20 seconds.
  • [08A-02-6] Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. In reach in four door freezer in storage area, raw shrimp stored over cooked smoked sausage. Not all commercially packaged. Operator re arranged freezer and moved raw shrimp to bottom cooler.
  • [01B-13-4] Stop Sale issued due to food not being in a wholesome, sound condition. In reach in four door cooler in kitchen, raw salmon thawed in reduced oxygen package. Observed on original package box to removed fish from reduced oxygen package when thawing. Operator stated thawed overnight.
  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On expo line , Butter packets 54°( cold holding), operator stated held less than two hours, operator put ice on butter packets for quick chill. butter packets not prepared or portioned today. Suggested using time as a public health control.
  • [03F-02-5] Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking . On expo line, whipped butter held on time as a public health control without time mark. Operator stated held out for less than three hours. Operator posted time mark.
  • [03F-10-5] No written procedures available for use of time as a public health control to hold time/temperature control for safety food. On expo line, grits and butter has time mark but not on written procedures. Operator added grits and butter to tine as a public health control.
