Ambient temperature on unit shows 45-46F during service. Advised to rely on 4 hour maximum time control and discard at end of breakfast if refrigerator is not holding internal temperatures of 41F or below. -milk inside dispenser 54F inside mini fridge breakfast line outside of prep area. Manager stated discarding at end of service, no written time procedures available on site, per manager.
  • [41-10-4] Toxic substance/chemical improperly stored. -fruit fly spray stored next to box of gloves, single service bowls in back area on top of refrigerator
  • [31B-02-4] No paper towels or mechanical hand drying device provided at handwash sink.
  • [11-26-1] No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses.
  • [03F-10-5] No written procedures available for use of time as a public health control to hold time/temperature control for safety food.
