  • [08B-38-4] Food stored on floor. In walk in cooler , bucket of pork stored on floor . Operator elevated during the inspection.
  • [08B-12-5] Stored food not covered. Observed in walk in cooler , bucket of smashed tomatoes , cooked rice and cooked beans stored uncovered. Operator covered during the inspection.
  • [01D-01-5] Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Observed operator selling ceviche without a parasite destruction letter . Advised operator to sell fish fully cooked until parasite destruction letter is available.
  • [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Flip top at cook line shelves soiled with food debris.
  • [08A-20-5] Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Flip top lower cooler at cook line , raw chicken stored over raw beef. Educated operator on proper separation/ storage. Operator moved chicken to lower shelf.
