  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed empanadas hot held at 132F in front line warmer. Per operator, empanadas cooked and placed in unit 1 hour prior to the inspection. Operator increased the temperature on hot holding unit for fast reheat.
