Observed : multiple staff over 60 days, certificates are not on sight. Training was done 2 weeks ago, per the manager.
[06-01-5] Time/temperature control for safety food thawed in an improper manner. Observed : frozen shrimp with water running on the bag, not submerged. The bag was placed in a bowl, the water was turned back on and the bag will be weighed down to be submerged.
[08B-49-4] Employee personal food not properly identified and segregated from food to be served to the public. Observed : in the tall reach-in cooler in the kitchen, employee food and drink stored over guest food. All employee food was moved to the bottom shelf.
[22-40-4] Quaternary ammonium sanitizer in spray bottle/bucket not at proper minimum strength. Observed : 2 buckets in the kitchen at 0 ppm for quaternary ammonia. The buckets were being dumped and the supply jug was being replaced.
