- [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed sausage gravy (110F-120F - Hot Holding) in food warmer table across from fryers. Operator had employee add more water and adjusted the temp. Retested at 165F
- [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw chicken (55F-56F - Cold Holding) at chicken breading cooler. Operator stated employee was cleaning cooler and accidentally turned cooler off. Chicken was placed in cooler approximately 1 hour prior. Operator turned cooler back on and Retemped chicken 25 min at 52F.
- [14-74-7] Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed chicken breading station reach-in cooler unable to maintain temp of 41F and below. Observed cooler was turned off. Ambient temperature of cooler at 55F. Retemped after cooler was turned on about 30 min and ambient temperature 35F
