  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler, across from the cook line observed cooked pork (48F - Cold Holding). Operator stated cooked pork was cooked the day prior and has been in the reach in cooler over night.

By the storage area, observed cooked breaded chicken (107F - Cooling) @3:30pm Operator stated cooked chicken was finished cooking at 1:00pm. Advised operator to place cooked breaded chicken in cold holding unit. Operator placed cooked breaded chicken in the freezer. Provided operator with cooling handout.
  • [01B-02-5] Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler, across from the cook line observed cooked pork (48F - Cold Holding). Operator stated cooked pork was cooked the day prior and has been in the reach in cooler over night.
