[02C-03-5] Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Gallons of milk, per operator opened more than 24 hours prior, not date marked. Operator dated milk container.
[31A-11-4] Handwash sink used for purposes other than handwashing. Hand wash sink in server station used as a dump sink. Discussed with operator to be used as hand sink only
[29-34-4] Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Splitter added to mop sink and no vacuum breaker present.
[14-27-4] Cast iron used as a food-contact surface other than only for cooking. Corn bread is baked in a cast iron skillet and then cooled in the same skillet and interrupting the cooking process. Discussed the need for uninterrupted cooking when using cast iron This is a repeat violation from the previous inspection dated 04-16-26
[22-02-4] Food-contact surface soiled with food debris, mold-like substance or slime. Soda nozzles behind bar and at service well have a build up of a mold like substance inside the nozzles. Ice tea nozzles have a build up of debris.

[06-09-1] Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Partially-thawed salmon packets were cut open by employee.
[13-07-4] Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed female food handler preparing lobster while wearing bracelets and a watch. A male foodhandler was preparing fruit pizza while wearing a wristwatch.
[31B-04-4] No handwashing sign provided at a hand sink used by food employees at the bar.
[35B-05-4] Outer openings not protected during operation and vermin and/or environmental cross contamination present. Large doors between inside and outside seating left propped open during service. Three flies observed in dish area and one fly at cook line. see comments for proviso language from oroginal plan approval.
[06-01-5] Time/temperature control for safety food thawed in an improper manner. Three containers of Harissa Sauce were thawing in the prep area at room temperature. Containers were out less than four hours. Employee placed in walk-in cooler.
