Manager of commissary states that hot dog cart which is located in same parking lot of commissary is using water hose in parking lot for ware washing. As per manager at commissary, no foods both TCS and non-TCS or any single service items are being stored or prepared in commissary. Commissary is open 7 days a week from 12noon to 1am. As per commissary manager, the hot dog operator is open and serving food to the public 7 days a week between 5pm to 12am. Operator of hot dog cart is never reporting to commissary as per manager.
  • [01B-04-5] Stop Sale issued due to food originating from an unapproved source. Operator has several TCS and non-TCS foods being stored on hot dog cart that are not allowed. Employee stated items are prepared at commissary kitchen but as per manager on site at commissary during inspection, no TCS and non-TCS foods are being stored in the commissary establishment or being prepared. Stop sale issued for following items below: 1 pan prep commercial kernel corn (prep on hot dog cart) 1 pan cut raw onions (cut on hot dog cart) 1 pan cut cole slaw cabbage (prep on hot dog cart) 2 blocks of yellow cheddar cheese 3 bags of cut cole slaw cabbage 15 bottles of homemade non-TCS dressings
