- [08A-05-6] Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shelled egg stored over ready to eat cheese in reach-in cooler next to sandwich make station. Operator removed raw shelled egg to properly stored.
- [53B-13-5] Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed operator only able to provide proof of food safety training for two employees (Olivia and Darrius). Operator tried reaching out to the other two employees whose training is missing.
- [41-27-4] Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Quaternary 500ppm) at ledge by triple sink. Operator added more water to dilute solution. Retested at 400ppm.
