  • [12B-07-4] Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed open employee beverage on shelf above build table on cook line. Operator removed beverage.
  • [40-06-5] Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee cell phone on build table on cook line. Observed 2 vape pens sitting on prep build table on cook line. Operator removed items.
  • [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed bulk bins for brown sugar and other items with buildup of dirt and grease in back prep area.
  • [29-49-6] Standing water in bottom of reach-in-cooler. Observed standing water in reach in cooler holding raw chicken items on cook line.
  • [14-17-4] Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed rusted shelves in walk in cooler.
  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw chicken breast and tenders in reach in cooler on cook line at 55F for 1 hour per Operator. Operator placed chicken in an ice bath. Raw chicken is kept in its own isolated reach in cooler, no other proteins. Rechecked temp prior to leaving. Raw chicken now at 40F in ice bath on cook line.
  • [53A-01-7] Manager or person in charge lacking proof of food manager certification. Observed CFM certificate expired for Ginger. No other CFM on site.
  • [16-37-1] No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator did not have the correct test strips for chlorine sanitizer on site.
  • [53A-05-6] No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ Observed 4 employees food handling no CFM on site.
  • [53B-14-5] Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed food handler training expired for Samantha and Matt on site at time of inspection.
