Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Chlorine sanitizer tested at 0 PPM, dish machine unable to dispense chlorine sanitizer at time of inspection. Instructed operator to set up three compartment sink with sanitizer at time of inspection.

Observed one employee at front line, clean kitchen prep table with towel and proceed to touch dumplings without fresh washing, hands or changing gloves.
