Also, gaskets on cook line cooler and front counter cooler soiled with food debris. Also, fan covers in walk-in cooler soiled with mold-like substance. Also, around nozzles in drink machine in lobby soiled. Also, interior of cubby under donut display soiled with food debris.
  • [03D-15-4] Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. On cook line, cooked egg (83F - Cooling @ 1 hour, 80F @ 1.45 hours); sausage patty (110F - Cooling @ 1 hour, 83F @ 1.45 hours). Employee made products and put in deep metal pans with lids on prep table after cooking. Employee put products in reach in freezer to bring temperature down quickly.
  • [22-08-4] Interior of oven/microwave has accumulation of black substance/grease/food debris. Interior of microwaves on cook line has food debris build up.
  • [03A-03-5] Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. On prep table next to fryers, raw shelled egg (73F - Cold Holding). Employee took out of walk-in cooler 30 minutes prior and forgot to put back into walk-in cooler. Operator put eggs back into walk-in cooler.
