  • [22-16-4] Reach-in cooler interior/shelves have accumulation of soil residues. 1.Observed walk in cooler shelves soiled with accumulation of soil residues. 2.Reach in cooler shelves at cook line interior soiled with food debris. Operator began to clean during the inspection.
  • [03E-02-5] Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. Observed at cook line , pork fried rice (135F - Reheating). Advised operator to reheat rice to 165F. Operator reheated rice on stove to 167F.
  • [08B-12-5] Stored food not covered. 1. On dry ingredients rack opposite hand wash sink, rice stored uncovered in bowl. 2. Dry storage rack to the side of cook line , salt and msg stored uncovered. Operator covered all items during the inspection.
  • [22-08-4] Interior of oven/microwave has accumulation of black substance/grease/food debris. Microwave interior soiled with food debris. Operator cleaned during the inspection.
