Observed multiple cooked food items, soups, and sauces prepared on site within past 3 days with no date markings stored in reach in cooler by steam table in kitchen.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked pork at temperatures of 85-99F stored on speed cart near hot holding unit behind raw meat display coolers. Person in charge stated pork was cooked an hour prior. Cooked pork was placed on time as a public health control with necessary paperwork filled out during inspection. Cooked pork (85-99F - Hot Holding)
  • [08A-05-6] Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw chicken stored over ready to eat cooked shrimp at far end of display reach in cooler with raw meats. Person in charge rearranged food items to proper storage levels.
