  • [02C-02-5] Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed no date marked on soup stored in walk in cooler. Per operator, soup prepared more than 24 hours.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken hot held in kitchen at 83F. Per operator, chicken cooked 1 hour prior to the inspection. Operator placed chicken in freezer for quick chill.
  • [12A-09-4] Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee return from outside and then engaged in food preparation without changing gloves and wash hands. After brief education, employee then changed gloves and wash hands.
  • [16-21-4] Accumulation of debris on exterior of warewashing machine.
