  • [02C-03-5] Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Gallon of milk open in walk in cooler not dated.
  • [08A-20-5] Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw chicken over raw veal in cook line make table, operator moved it to bottom shelf.
  • [21-09-4] Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. On prep table chef moved to sanitizer bucket.
  • [36-17-5] Floor tiles missing and/or in disrepair. Missing and cracked tiles on kitchen floor.
  • [40-06-5] Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Cell phone on prep table owner moved it.
  • [41-07-4] Container of medicine improperly stored. Medicine ( burn cream and Advil) stored in small make table with shredded Parmesan cheese. Segregated into a small bin and placed on bottom shelf.
  • [35B-01-4] Exterior door has a gap at the threshold that opens to the outside. 1" gap under screen door, back of kitchen.
  • [53B-14-5] Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Jose, Alexa, and Rene expired earlier this year.
  • [53A-05-6] No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ Food manager Gonzalo had expired manager certification.
  • [01C-06-5] Clams/mussels/oysters removed from original container for long-term storage. Mussels and clams moved to make table reach in cooler no copy of shell tags at alternate location, educated operator he will make copies in future.
