In the cooler in the back preparation area, observed cut tomatoes (52F - Cold Holding); cooked sweet potatoes (47F - Cold Holding); cooked quinoa (46F - Cold Holding). Foods had a date of 7/28. Foods have not been used today for service. Determined the cooler is properly working all other foods were at or below 41F.

Discussed with operator hand sinks are only for hand washing to prevent and reduce cross contamination. Operator stated they will provide a tub for servers to dump liquids in.

Observed a water bottle inside an ice machine located in the back, ice machine is used for drinks. Discussed with operator ice for drinks should be protected as it is considered a food item. Operator stated they will dump ice out and clean machine.
