[03A-02-5] Observed the following food temperatures greater than 41°F; diced tomatoes (59F - Cold Holding); shredded cheese (57F - Cold Holding) All foods were located in reach in cooler under stove that had an ambient temperature of 59°F. Per manager food had only been in cooler for less than 2 hours. Manager moved all foods to nearby cooler.
[10-07-4] In-use utensil stored in standing water less than 135 degrees Fahrenheit. Located next to stove.
[23-03-4] Observed reach in cooler gaskets soiled with accumulated food buildup.
[08B-39-4] Observed oranges not washed prior to being placed in juicer. Advised manager that all raw fruits and vegetables shall be thoroughly washed in water to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form.
[14-38-4] Observed Food storage container cracked or broken. Manager discarded.
[29-49-6] Standing water in bottom of reach-in-cooler under flat grill.
[08B-38-4] Observed cases Food stored on floor in walk in freezer. Manager moved to shelf.
[14-74-7] Observed reach in cooler under stove not maintained in good repair with an ambient temperature of 59°F. All TCS foods were removed and placed in nearby cooler. Advised manager not to store time/temperature control for safety food in this unit until the unit is repaired. Manager called maintenance.
