- [08A-20-5] Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken above raw beef inside walk in cooler. Person in charge started inverting the products.

To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed some employees without food handler training: Thomas and Beta dalakishvili.
- [10-12-5] In-use ice scoop stored on soiled surface between uses. Observed ice scoop on the top of the ice machine, the surface is not clean. Person in charge sent it to the dishwasher machine.
- [12A-10-4] Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee at the cook line touching his face, then continued cooking without washing his hands. Employee washed hands after being coached.
- [02C-02-5] Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed desserts in the front line reach in cooler ( tiramisu, chocolate mousse and coconut pudding ( malabi) without date marking.As per person in charge , all the dessert are from Monday 2/16.
